Perfect “Skirt day” lunch… Sun, a terasse, and a sexy sandwich!
Well I don’t know about you but today is my Rokjesdag, aka ‘Skirt day’. I feel like I’ve got to run, and feel the spring, and why not dancing in the streets like ‘Smart and Sexy‘ Lisa! (oups, seems EMI has put some restrictions on bloggers re-blogging the youtube video… pfff. Check out the video over there).

Just before that, I thought I ‘d treat you with a little extra sun on a plate with that sexy sandwich, perfect for such a beautiful day: Crunchy bread, a little smoked trout, the crunch of an apple and the smoothness of an avocado, pepped up with an extra fresh yogurt, lemon and basil dressing…
Ok, that’s it, I’m out!
… I’m walking on sunshine …whoa oh! And don’t it feel good!
Smoked trout, apple and avocado sandwich
Sandwich a la truite fumee, a l’avocat et a la pomme
serves 2 pers.
prep: 10 min.
Ingredients:
4 slices of your favorite bread (I used ‘Pain de Campagne);
2 smoked trout fillets;
1 avocado;
1 juicy apple (I used an Elstar);
lemon juice;
For the sauce:
2 Tsp (greek) yogurt;
1 tsp olive oil;
1 tsp lemon juice;
fresh basil, thinly chopped;
sea salt and pepper to taste.
In a small bowl, mix all the ingredients for the sauce, season to taste and set aside.
Peel, core and pit the avocado and apple. slice thinly and sprinkle with lemon juice to avoid browning.
Toast the bread to your liking. Spread a bit of the sauce on one slice of bread. Lay alternate slices of apple & avocado. spread more sauce. Top with 1 trout fillet, a bit more sauce, a dash of salt and pepper, and finally a slice of bread. Repeat the operation for the second sandwich.
Serve with a side salad of mixed young salad leaves tossed with a bit of olive oil and lemon or the same dressing used for the sandwich.
